  • Cleaning scales

Start by rinsing the fish with cold water to soften the scales. Place the fish on sheets of paper or a few newspapers, and in this way, you will be able to quickly clean the place, whether you are in the kitchen or camping. Hold the fish tightly by the tail and, using the edge of the knife, scrape the scales from tail to head. Rinse it under a stream of cold water and repeat the process on the other side. Make sure you remove all scales by running your hand over the surface of the fish.


  • Evisceration

Position the fish on the table and gently cut the abdomen from tail to head. You need to make a shallow cut so that you can remove gills, fins, organs, and fats well. It is important to remove everything from the inside of the fish until only the meat remains. Then rinse it with cold water to remove any remaining residue and wipe it with paper towels.



Use a threaded knife to cut from head to tail along the spine. Peel the meat lightly by hand. Repeat the process in reverse, so that you can remove the spinal cord and the fish’s head. Then remove the bones left in the meat. You will get a fish fillet ready to be cooked!
